Valentine’s Day Dinner

Instead of going out, we celebrating Valentine’s Day by cooking dinner at home. We stuffed and roasted some bell peppers in the oven. The stuffing was leftover from stuffed zucchini we had a few nights ago. Then we made a beets and fennel salad, and a side of steamed broccoli. The dinner came out well with a minimum amount of work, which was what we were aiming for.

It was nice just cooking at home instead of sitting in traffic and going into a crowded restaurant with a bunch of couples and heart-themed stuff everywhere.

    That looks SO GOOD! I love peppers, sadly my guy doesn’t and he does the cooking. He hates zucchini too!!! Gahhh, I’m missin’ out on foods I love, hahaha. I need to get back into cooking my own lunches so i can enjoy these foods again :).
