I was craving peanut butter cookies, so I took the recipe from The PPK’s Oatmeal Peanut Butter Cookies and adjusted it a bit to make it uh…more nutritious for breakfast. I used a banana instead of the apple sauce, put in chopped pecans, and added in some craisins. They came out pretty well — a little crunchy on the edges, chewy in the middle.
I didn’t realize the recipe made so many cookies though. Looks like my coworkers are getting cookies shoved down their throats for breakfast!






Oooh, maybe my BF will like these for breakfast….
