onion bread
I made some onion bread tonight from scratch. I couldn’t find a simple bread recipe, so I just made up my own recipe. The bread roughly consists of:

  • 2.5 cups bread flour
  • 1 cup wheat flour
  • 1 tsp rapid-rise/bread-machine yeast
  • 1.5 cups of warm water
  • 1.5 tsp salt

I just threw those ingredients together in the stand mixer and put in enough flour to make a slightly tacky but solid dough. I let the dough rise in the oven (turned off) for an hour, punched it down, rolled it into a 1/2 inch sheet, spread some olive oil on the top, sprinkle on some minced garlic and sauteed chopped onion, rolled it into a log, and baked it at 475 for about 20-30 minutes. The inside of the bread was a bit underdone, but next time I’m going to try lowering the oven temperature and let it bake for longer.
steak and potatoes
The bread made a nice accompaniment to the (tofu) steak and potatoes I had for dinner. The potatoes got a bit burnt and I should have baked them instead of frying them, but they tasted pretty good with the salt, pepper, cayenne pepper, tumeric, and paprika mixture I sprinkled on top.
