Last Minute Pizza

On Tuesday night, I had a craving for pizza and since I already had dough rising in the kitchen (olive bread to be exact), I figured, why not try making pizza? Maybe olive bread dough isn’t the best to make pizza with, but I think it came out tasting great for our first try.
The first pizza had sun-dried tomato pesto (some extra that we put in the freezer months ago), sliced onions, plum tomatoes, basil leaves, radicchio, and garlic. It was delicio.
Our second pizza had what I thought was regular pesto, but turned out to be green Thai curry paste in the fridge. So I made a fusion pizza with Thai basil, tomatoes, mushrooms, and onions. It tasted pretty good even though Thai curry paste isn’t what I would picture on a pizza.
Overall, a good first try. The hardest part was getting the dough off the plate we were prepping it on and onto the cast iron skillet in the oven, which was where we were baking it.
