vegan tacos
Helped the BF make vegan tacos for dinner last night. They definitely were not muy authentico but they were pretty damn tasty. The taco filling was just some chopped up mushrooms, tofu, onions, and fake char siu pork we had leftover. We used some frozen leftover Mexican rice as well. A dallop of fake sour cream and guacamole, some chopped up red onions, green onions and tomato, and it was as Rachel Ray would say, YUM-O. (aaah kill me now!)

Since the filling was seasoned with soy sauce and I added sprouts and arugula to my taco, you could say it was fusion food and charge $6 extra at a restaurant!
